It's the end of February and I'm so excited.  Wanna know why???  TIM HORTONS ROLL UP THE RIM IS ON THE WAY!!!

 Ok wait ... this is really a good coffee talk discussion ... come with me in the next paragraph so I can tell you my coffee story ... (and it's NOT because I'm excited to win a car ... or another freakin doughnut).

COFFEE TALK

A few years ago, when we didn't need a mask everywhere and I didn't love drive-thru's as much, I was standing in line at Tim Hortons grabbing a coffee.  A woman standing in front of me turned to her friend and said:  "SPRING IS ON ITS WAY!!!"  

(It was likely -40C outside, because I remember thinking she might've lost it)

She then said "Roll Up The Rim is here ... that's the sign that spring is coming!!!"

I'm unsure if this is a common thought or just something this one woman believed and I'm equally unsure if Tim Hortons actually planned this out on purpose.  However, from that moment on, the Roll Up The Rim Contest has represented spring to me.  

It's not the Farmer's Almanac.  

It's not Wiarton Willie (Punxsutawney Phil's Canadian counterpart).  

It's not Environment Canada. 

It's Tim Hortons who tells me when spring comes.  

In 2020 Tim Hortons created a more pandemic-friendly contest where you don't get to physically roll up the rim ... rather opting for the Tim Hortons app.  Either way, the ads alone get me excited for spring and THAT ... is kick ass.




Side note:  We spend a great deal of our mental energy connecting negative thoughts or energies to various situations.  September = back to school;  January = dreary;  Monday = back to the grind.  What if we INTENTIONALLY chose to create more FUN and HAPPY connections to things and less of the negative?  Can you change some of yours around?





FENG SHUI TIP OF THE MONTH

This month in the UNSTUCK with the feng shui chick facebook group, I held a masterclass called "Money Shift", I talked about using your space to attract the relationship that you want, what to do if you're stuck in indecision ... and a whole whack more.  

However, given that Tim Hortons is leading us to spring you might be inclined to think about sprucing up the exterior of your home when the weather warms up, so that's what I'm gonna talk about:

EXPANDERS

Ideally, we want to have big wide expansive doors that lead us into our homes.  Our architectural front door is where we draw all the good energy into our homes after all so we want to make sure that this space gives us the best opportunity to do that.  MOST times though we have narrow doorways, poorly lit areas or front doors that are on an angle and not easily seen from the road.  In those cases, what do we do??

We add some items that visually EXPAND the space.  I've gathered up a number of different homes so you can see what I mean.




Like these shrubs, the gold vases and the shutters.




Or these topiary trees.




Or the widened path and the plants on either side of the walk.



or these crazy tall potted trees.



or these potted plants (though ... I think moving them a bit closer in together with brighter larger flowers and a larger mat would be even more impactful).

If you scroll back up and just imagine what these homes would look like without the expanders, you'll see what I mean.  The doors look MUCH smaller without them.  Remember:  the more expansive, the more good energy can come in and the front entrance is linked to OPPORTUNITIES!!!

COOL SHIT I LOVE:

What you may not know about me is that at any point in time I am connected to amazing lightworkers and entrepreneurs.  I choose to believe that it is our life's mission to evolve every day and so it's important to me that I am always learning AND surrounding myself with expanders (just like my front door).

These sprays from Deja Vu Foundry were posted in my meditation group and we all just fell in love with them.  There's just something I appreciate SO much about a casual, cheeky name for products!!!   Mary Sue (the creator) said that she channeled these sprays and her business was on track to 4x this month.  "This is the power of aligned action, integration and leaning into FUN".  

YESSSSS and that's exactly the vibe that makes me love this product so much!!!

 WHAT (or who) INSPIRES ME:

While I had intended to speak about something entirely different in this section for February, as I was writing tonight I received this quote with the message:  

"This instantly reminded me of you!!! This is exactly how I feel about you!!  You totally rock."



What an amazing message to get from someone, you know???

It reminded me that what inspires me the most I think, is women who are so confident in themselves, that they take time out of their day to reach out to another person, out of the blue, with a compliment like this one.   You can INSTANTLY tell that they mean what they say with every cell of their body, that they aren't saying this with any expectation or conditions to the compliment ... they just truly want to let you know that they appreciate you.  

That kind of confidence, selflessness and kindness is just inspiring as fuck to me.  I challenge you to pay it forward this month and reach out to someone YOU admire and tell them why you do.  This could be the thing that changes the world ... one message at a time.

CLIENT SHOWCASE:

I have had a LOT of conversations with friends, clients and coworkers over the years.  I am a good listener, I have a kick ass intuition and while some issues seem pretty easy to navigate, others are freakin DIFFICULT to sift through, particularly the relationship stuff.  Whether it's a traditional partner relationship, family or coworkers ... it's not always a walk in the park.  (if it is supposed to be, then I'm doing it wrong cause I'm pretty sure there are days when my husband wants to duct tape my mouth shut).

WHAT'S COMIN UP?

As I've already said I held a free masterclass in February called MONEY SHIFT.    I truly believe that we can manifest ANYTHING we want ... but it's a shift in three things that we need:  energy, mindset and action.

TASTY SHIT!

I used to try to stay away from beef (and likely ... I should still) but there are just some recipes that are worth the tummy ache on occasion and THIS one is one of them.  It's 6 ingredients, quick to make, so different and oh so good.  Not shockingly ... it's another Jamie Oliver special.

GINGER SHAKIN' BEEF
 

INGREDIENTS (this serves 2, we usually triple this recipe)

10 oz strip loin (ideally about 3/4" thick)  
1-1/2" chunk of fresh ginger
1 tbsp miso paste
2 tsp liquid honey
2 mini bok choy
1 tbsp red wine vinegar

Pull the fat off of the strip going, finely slice the fat and place it in a cold non-stick frying pan.  Put on a medium-high heat to crisp up while you peel and matchstick the ginger, then add that to crisp up too.  Cut off the sinew, then dice the steak into 1-1/4" chucks and toss with the miso until well coated.  Scoop the crispy fat and ginger out and put aside then add the steak chunks to the pan.  Cook for 4 minutes, tossing regularly then drizzle in the honey and 1 tbsp of red wine vinegar.  Toss for 1 more minute until shiny and sticky.

Meanwhile, half the bok choy, cook in a pan of boiling water for just 1 minute so they retain a bit of crunch, then drain well and plate up.  Spoon over the steak and sticky juices from the pan and finish with the reserved crispy bits.  

NOTE:  this recipe is written exactly as it is in the cookbook.  We HAVE made it this way, but we found that cooking the fat didn't actually add as much flavour as Jamie promised.  We have skipped this step in all of the other times we've made this recipe and didn't miss it at all.    The crispy ginger is a MUST though!!!  Plus it looks nice on the plate.

NOTE 2:  I have boiled the bok choy, but I always find it a bit too watery no matter how much I try to drain it.  We now opt to just steam it.  Way nicer!
